Well it is the holidays and as always I wil share the best dessert recipe ever..........

Cream Puffs(8)
Heat to boiling point 1 cup water
1/2 cup butter.......no margerine......they had no margerine back then

Stir in 1 cup sifted flour till mixture leaves pan and forms a ball....
Remove from heat and cool.

Once cool beat in by hand 4 eggs one at a time.

Next it is baking time.......this mixture makes 8 Puffs

Drop on baking sheet and bake at 400 degrees 45-50 minutes.

Custard

Mix in Sauce pan 1/2 cup sugar
1/4 tsp salt
6 tbls flour
Stir in 2 cups top milk( also known as heavy cream)
cook till boils.
Boil 1 minute and remove from heat.
Stir a little of the mixture into 4 egg yokes and 2 eggs that have been beaten to temper them.
Blend into hot mixture once tempered.....bring mixture to boiling point.
Cool and stir in 2 tsp of real Vanila( get the stuff made with real liquior and beans as it is the best.......spendy but the best...........Put in fridge

Chocolate Topping
1 egg beaten
1/3 cup melted butter
1 1/2 sq.chocolate( i have found bakers chocolateworks the best)
1 tsp Vanilla
1 1/2 cup powered sugar
Heat it to jsut before boil and serve hot over the top

Plating
Cut the top off of the puff and with a spoon scrape out the gills from the eggs....you will see what I men when you cut off the top.......
Fill with chilled custard.....put the top back on.
Top with hot chocolate topping..........

I also recomend making this in batches of 8 only......making more at one time the custard and puffs never come out well.......takes longer,but works better.

I also recomend making at least 2 for every guest.......trust me......even two is gonna leave the platter empty......LOL.

Puffs are about the size of a big biscuit when baked.
Beer...........It's not just for breakfast anymore.

Oh just get the stretchy waist band kind :) :) they will accommodate an enlarging girth :) :)

Oh my friends you must try these!! I toook the time to make them and they are just amazing!!! I have to go tape my mouth shut now because I simply gotta stop with the treats
